To disable iTunesHelper, open the Task Manager, (You can always get it done by right-clicking on the taskbar, then click on Task Manager.) Once the task manager opens, click the Startup tab. 

Then locate iTunesHelper on the list of programs that starts up on their own on system boot.

Right-click it and then click Disable. After a restart of your computer, iTunes will no longer open automatically when you connect your iPhone.
